These delicious sugar-free, gluten-free Strawberry Cupcakes saved the day! We celebrated our daughter Abigail’s third birthday with an all-out princess party, per her request. And a princess party just isn’t complete without sweet super-pink cupcakes. So while I served up a batch of sugar-laden naughtiness for the party, I also whipped up a batch of these Trim Healthy Mama friendly strawberry cupcakes to keep me on track, and also as a healthy alternative for our diabetic relatives attending the shin-dig. And I have to say, these good-for-you cupcakes were way better than any boxed cake mix treat.
Trim Healthy Mama Strawberry Cupcakes
Ingredients:
- 1 cup coconut flour
- 1 cup almond meal
- 1/2 cup Trim Healthy Mama Sweet Blend, or 3/4 cup Xylitol or Truvia
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 4 ounces cream cheese
- 3 eggs
- 1/2 cup heavy cream
- 1 tablespoon strawberry extract (optional)
- 1 pint strawberries, crushed
For frosting:
- 4 ounces cream cheese
- 1/2 stick butter
- 1 teaspoon vanilla extract
- 3 tablespoons Trim Healthy Mama Sweet Blend, or 4 tablespoons ground xylitol or Truvia
Heat oven to 375 degrees. In a bowl, combine coconut flour, almond meal, sweetener, baking powder, and salt.
Mix well and set aside. In a large mixing bowl combine 4 ounces cream cheese, eggs, heavy cream, and strawberry extract.
Use a hand mixer to blend ingredients for about two minutes.
Next, cut the tops off a pint of strawberries and place into a large ziplock bag. Squish to remove most of the air and then zip close.
Use a rolling pin, a can of beans, your hands… whatever, to crush the strawberries.
Pour crushed strawberries into wet ingredients bowl and mix by hand.
Fold dry ingredients into wet ingredients slowly, to keep from beating out the air in the wet ingredients.
Simply scoop from the bottom and incorporate the dry ingredients in a tucking motion until fully mixed.
Spoon batter into prepared muffin tin. Cute cupcake liners are great, or you can spray with a healthy non-stick coconut oil cooking spray.
Bake for 30 minutes at 375 until done. A fork inserted into the middle of a cupcake should be clean when removed. Allow cupcakes to cool and prepare the frosting. In a bowl combine 4 ounces of cream cheese, 1/2 stick butter (both softened), 1 teaspoon vanilla extract, and sweetener. Beat with a hand mixer for a minute or two, until blended and smooth.
After cupcakes have cooled, smooth frosting onto the tops – and you can decorate with a strawberry just to add a little something special.
These strawberry cupcakes were tasty little lifesavers during the party! I was able to continue losing weight on my Trim Healthy Mama journey and still enjoy a treat with my family.
